#Recipe Carrot Ginger soup from Soupe du Jour
Ingredients (serves 4)
- 2 tbsp vegetable oil
- 8 large carrots, peeled and thinly sliced
- 1 white onion, peeled and chopped
- 2 tsp grated ginger
- 500 ml vegetable stock
- 500ml water
- 2 oranges
- Chopped parsley for garnish
- Salt
Method:
- In a saucepan heat the oil and sweat the onions and carrots until the onions are soft but not coloured – this takes about 10 mins.
- Add the vegetable stock and water to the vegetables and add the juice of the 2 oranges, lastly add the ginger.
- Bring up to a simmer and cook until the carrots are soft which takes about 25 mins.
- Blend your soup until completely smooth and salt to taste.
- Sprinkle chopped parsley on top as garnish and enjoy!
