#Recipe Carrot Ginger soup from Soupe du Jour

Ingredients (serves 4)

  • 2 tbsp vegetable oil
  • 8 large carrots, peeled and thinly sliced
  • 1 white onion, peeled and chopped
  • 2 tsp grated ginger
  • 500 ml vegetable stock
  • 500ml water
  • 2 oranges
  • Chopped parsley for garnish
  • Salt

Method:

  1. In a saucepan heat the oil and sweat the onions and carrots until the onions are soft but not coloured – this takes about 10 mins.
  2. Add the vegetable stock and water to the vegetables and add the juice of the 2 oranges, lastly add the ginger.
  3. Bring up to a simmer and cook until the carrots are soft which takes about 25 mins.
  4. Blend your soup until completely smooth and salt to taste.
  5. Sprinkle chopped parsley on top as garnish and enjoy!
