Recipe: Easy Baked Apple Rollups

If you haven’t been apple picking yet, what are you waiting for? Along with picking a pumpkin, heading out to the local farm to pick your own apples is a traditional autumn activity. I am lucky to have just such a farm only down the road where I have gone apple picking several years in a row.

There are so many delicious recipes you can make using apples, and if you don’t have time to pop to the farm for an hour or so to pick your own don’t worry – fruit from the supermarket whether it’s fresh or preserved is also super versatile.

This super quick and easy recipe for baked apple rollups uses a can of pre-made apple pie filling, but if you have the time you can easily cook down your own apples with sugar and spices to make a delicious homemade apple pie filling. Don’t feel guilty if you don’t have the time! A canned filling is just as tasty.

If you’re plant-based this recipe can easily be made dairy-free – just use your preferred vegan cooking oil or spray and make sure the tortillas are free of milk.

Feel free to serve your rolls up as you prefer; with ice cream, cream, custard. drizzle over some melted chocolate or just as they are. YUM. I hope you give this recipe a go!

Ingredients:

  • Street Taco Sized Tortillas
  • A 425g (15oz) Can of Apple Pie Filling
  • 1 Cup of Sugar
  • 1 Tablespoons of Cinnamon
  • Butter Flavored Cooking Spray
  • Tooth Picks

Method:

  1. Preheat oven to 175°C
  2. Place the tortillas on a flat surface and spoon the apple pie filling into the center of each one.
  3. Roll the tortilla up like a taco and use a toothpick to pin it together,
  4. Place the rolls ups on a baking pan.
  5. Bake for 12-15 minutes.
  6. While the roll ups are baking, combine the sugar and cinnamon in a bowl.
  7. Remove the apple rollups from the oven when ready.
  8. Sprinkle the cinnamon sugar mixture onto the rollups.
  9. Serve & enjoy.
