Recipe: Matcha Mojito Mocktail

With warmer weather on the horizon, I have been trying out some new recipes for refreshing drinks to enjoy al fresco in the sun (when it arrives!). I have tried a lovely iced tea and today I am showing you a quick and easy recipe for a fabulous mocktail made with matcha tea and ginger beer.

I have to admit that I was always a bit intimidated by cocktails but there’s no need to be worried, there are lots of simple mixes which you can enjoy at home – with or without alcohol. So why not give this one a go?

A classic mojito is made with white rum, lime, sugar, mint and soda water, but this recipe uses ginger beer for an extra kick! Enjoy!

Ingredients [yield: 2 servings]

  • 10-12 mint leaves (to taste)
  • 2 medium limes
  • 200ml Ginger beer
  • 2 teaspoons matcha powder
  • 2 teaspoons Agave Syrup
  • Crushed/ Cubed ice

Method:

Garnish:

Start by preparing your cocktail garnish by peeling off a stripe of ginger and a stipe of lime. Then, with the help of a toothpick, we will stick the stripe of ginger forming some curves. With the stripe of lime, we will carefully twist it until we form a coil spring-like strip and wrap it around the toothpick with the ginger.

Assemble:

To begin this matcha mojito mocktail, first, add 1/2 teaspoon of matcha powder to each of your glasses and dissolve it with a teaspoon of agave syrup, (if needed add a teaspoon of water to help to dissolve). Add the lime into the glass and muddle for a while. Now, we will add ice and a few mint leaves. Finally, top up with some ginger beer, stir a bit and add some crushed ice. Finish with your garnish and some mint leaves and serve!
