Recipe: S’mores Cake Mix Cookies
Autumn is setting in, and it’s the perfect season to snuggle up under a blanket or around a campfire and enjoy some sweet treats.
S’mores are campfire treat popular in the United States and Canada. They are made of one or more toasted marshmallows and a layer of chocolate sandwiched between two pieces of graham cracker. The term was first seen in a 1938 publication aimed at summer camps and in 1957 a Betty Crocker cookbook contains a similar recipe under the name of “s’mores”.
What if you don’t like graham crackers? Or you don’t want to have to build a campfire to enjoy a gooey, chocolatey treat? This recipe for s’more cake mix cookies makes a fantastic compromise, using traditional ingredients in a new way to make something quick and easy to make but still delicious!
Feel free to adapt to your own tastes; perhaps you want to throw in some cinnamon? or maybe peanut butter, caramel or lemon curd? Play around and experiment to make your own signature recipe.

Ingredients:
- Yellow cake mix (such as Betty Crocker)
- ½ cup of vegetable oil (or rape seed oil)
- 2 large eggs
- 1 cup of mini chocolate chips
- 1 cup of mini marshmallows
- ½ cup of graham crackers (chopped)
Method:
- Preheat your oven to 175°C
- To a large bowl add your cake mix, oil, and eggs and stir until fully mixed.
- To the cake mix add your chocolate chips, marshmallows, and graham crackers. Stir to combine.
- Using a cookie scoop, scoop up the dough, and drop onto a baking sheet, spaced 2 inches apart to ensure they don’t merge when baking.
- Bake on the center rack in the oven for 10-12 minutes.
- Enjoy all to yourself or invite friends over to give them a try!
