Recipe: Vegan Dalgona Matcha Latte
I am a HUGE lover of matcha. Have you tried it? Matcha is finely ground powder of specially grown and processed green tea leaves, traditionally consumed in East Asia. It has a lovely grassy and sweet flavour and boasts a host of benefits such as being high in an antioxidant which is said to be cancer-fighting, helping to prevent heart disease, type 2 diabetes and cancer, and even encouraging weight loss.
Of course I mostly drink it because it’s delicious and I love to find new ways to prepare it. I usually endulge in a matcha latte or just straight up as tea mixed with hot water, but when I heard of a dalgona version I knew I had to try it. Dalgona coffee is made by whipping equal proportions of instant coffee powder, sugar, and hot water until it becomes creamy and then adding it to cold or hot milk. It can be topped with a range of delicious treats from coffee powder, cocoa, crumbled biscuits, or honey.
This lovely recipe is a vegan friendly version combining plant milk with agave and aquafaba for a creamy treat – serve hot or cold with whatever toppings you fancy! It only takes a couple of minutes to whip up (haha!) so why not give it a try?
Ingredients:
- 60 ml Aquafaba
- 120ml 70-80C water (lower heat softer, mellower flavour)
- 2 tsp Agave Syrup or similar
- 170-180ml Soy milk ( you can substitute for any flavoured milk you like)
Equipment:
- Hand-mixer
- Chashaku Matcha tea scoop (Optional)
- Chasen matcha bamboo whisk (optional)
Method:
First, we will filter our aquafaba from a chickpea can. Then we will add the aquafaba to our mixer or a bowl and whisk until it becomes fluffy.
In another bowl, we will add the matcha and the hot water (if the water reaches above 80C it will turn the matcha ultra bitter and it will taste off)
Whisk carefully until fully dissolved and then we will add 2 tablespoons of agave syrup.
Now, we turn back on the mixer with the aquafaba foam and slowly and very carefully we will add our matcha mix until it fully mixes with the foam.
Pour the milk into the glasses, add ice (optional) and top up with the matcha foam and sprinkle some matcha powder or other toppings, for decoration. Enjoy!!!
