Start the day with a #THREESIXTYBOOST
Did you fall foul of blue Monday this January? The first month of the year feels like a bit of a slump after the celebrations of Christmas and New Year but you don’t have to let the dull weather get you down.
I was lucky enough to have been sent a package of goodies and a recipe from Three Sixty coffee to make some great boost bars made with oats, cocoa nibs and cinnamon for a bit of a kick on chilly, dark mornings.
Create your own boost bars with the following ingredients:
- 175g porridge oats
- 5g cinnamon
- 15g cacao nibs, gently roasted
- 75g butter
- 75g light brown sugar
- 35g honey
- Gently roast the cacao nibs in the oven at 130°C for 10 minutes.
- Melt the butter gently in a pan and combine with the honey.
- Take off the heat before adding the sugar, oats, cinnamon and cocoa nibs.
- Mix well to form a sticky dough and place in a greased and lined tin, making sure the dough is flat.
- Bake at 150°C for 20 minutes until golden brown.
- Leave to cool before cutting into slices.
- Eat right away or keep in an airtight container for up to a week.
They go great with a hot cup of Three Sixty coffee as a morning pick me up!
